What is it about a cheesy, saucy wedge of pizza that just does it for me? With the right crust, it can be oh so satisfying! The chew of the bread, the mix of spices and herbs with tomato, the hint of garlic, and of course, the melted cheese. Mmmm.
In my attempt to watch my calorie intake, I find that pizza just isn’t worth it. One slice is about all I’m allotted and it only leaves me wanting more.
While the following recipe isn’t “to die for Za”, it does help satisfy the pizza craving in a filling and low-calorie/low-point fashion. Plus it uses up all the leftover ingredients from the burritos and pasta. And its meatless! This recipe is inspired by Hungry-Girl.
Recipe: Pretend Pizza for One
1 large wheat tortilla (preferably fat-free and low carb, like La Tortilla Factory Smart & Delicious)
1/4 cup tomato sauce (leftover spaghetti sauce or can of plain tomato sauce with thyme and garlic mixed in)
1/4 cup fat-free shredded mozzarella (sub part skim for a few more calories and flavor)
1 Tbs grated parmesan cheese
Diced green or red pepper
Sliced mushrooms (lightly saute if you prefer)
**Crumbled goat cheese
**Veggie Italian Sausage or soy crumbles
Pre-heat oven to 375. Bake tortilla for about 5 minutes or until slightly crisp. Add sauce, cheese, and any desired toppings. Bake for additional 5 minutes or until cheese is bubbly. Hint: a quick shot of non-stick spray onto the fat-free cheese will help it melt more evenly.
Serve with a large green salad or fresh fruit.
